Celeb chef Vikram Vij to launch new fast casual Indian restaurant in GTA

A new fast casual Indian restaurant is set to launch in the GTA with its first location in Newmarket.
Bombay Frankies will open this September in a partnership with celebrity chef Vikram Vij and Eat Up Canada. Vij—co-owner of the famed Vij’s Restaurant and Rangoli Restaurant in Vancouver—will lend his culinary expertise from growing up in India to create a menu inspired by the frankie roll (one of India’s most beloved street foods).

The frankie roll originated in Bombay—it is a handheld, burrito-style flatbread wrap called a paratha, filled with meat or vegetables and a mixture of Indian spices and sauces.
Bombay Frankies will serve a variety of meat and vegetarian frankie options, as well as frankie bowls, salads, side items, and drinks.
“Frankies have always been dear to my heart because they bring me back to the streets of India, its culture and deep-rooted food history. Namaste and enjoy,” Vij said in a statement.
Alex Gerzon and George Heos, co-founders of Eat Up Canada, already have plans for Bombay Frankies’ expansion across Canada.
“The goal is to open three to five locations in the first year, with the potential for more than 100 restaurants in 10 years,” Heos said. “Having seen the rise in popularity of Indian cuisine in Canada, we believe there’s a huge opportunity for Bombay Frankies in the fast casual restaurant sector.”
In addition to Chef Vij’s menu items, they plan to focus on offering superior customer service and a great team culture,” Gerzon said. “These are the core values that Eat Up Canada is committed to as we move forward with Bombay Frankies and other exciting projects.”
Bombay Frankies will open in Newmarket, at Yonge Street and Green Lane, in early September. The Newmarket location will be the first in Canada.
